The vegan recipe for Pineapple Nuggets:
servings – 4 to 6
- 400 g pineapple (peel, core and cut into small chunks)
- 1 tbsp ground golden flax seeds
- 1 cup wheat flour
- 1 /2 cup rice flour
- 1 cup water
- 1/2 tsp salt
- Combine ground golden flax seeds, wheat flour, rice flour, water and salt; stir until a smooth batter is formed.
- Heat oil over high heat.
- Coat the pineapple chunks in the batter and fry them in hot oil until golden brown.
- Remove, drain and serve.
