The vegan recipe for Nutritional Choy Sum Soup:
servings – 1 to 2
- 4 Choy Sum leaves (wash and cut into small sections)
- 4 slices ginger (cut into thin slices)
- 2 cups water
- 1 tsp nutritional yeast flakes
- 1/4 tsp salt
- Heat oil and saute ginger until fragrant.
- Add water and bring to a boil.
- Add Choy Sum, nutritional yeast flakes and salt.
- Stir well and briefly simmer.
- Ladle into soup bowls and serve.
