The vegetarian recipe for Steamed Pumpkin with Bell Peppers and Balsamic Vinegar:
Ingredients
- 4 wedges (250 g) small pumpkin (deseed and steam until soft)
- 2 green bell peppers (slice, blanch and drain)
- 3 potatoes (peel, cut into small cubes and steam until soft)
- 2 portions (32 g) soft cheese – suitable for vegetarians
- 1 tbsp extra virgin olive oil
Seasonings
- 1 tsp balsamic vinegar
- salt to taste
- ground black pepper to taste
Method
- Mashed Potatoes: Combine potatoes, soft cheese and salt; mash.
- Bell Peppers with Balsamic Vinegar: Sprinkle olive oil, balsamic vinegar and ground black pepper over bell peppers.
- Serve steamed pumpkin with mashed potatoes and bell peppers with balsamic vinegar.
