The vegetarian recipe for Steamed Pumpkin with Bell Peppers and Balsamic Vinegar:


  • 4 wedges (250 g) small pumpkin (deseed and steam until soft)
  • 2 green bell peppers (slice, blanch and drain)
  • 3 potatoes (peel, cut into small cubes and steam until soft)
  • 2 portions (32 g) soft cheese – suitable for vegetarians
  • 1 tbsp extra virgin olive oil


  • 1 tsp balsamic vinegar
  • salt to taste
  • ground black pepper to taste


  • Mashed Potatoes: Combine potatoes, soft cheese and salt; mash.
  • Bell Peppers with Balsamic Vinegar: Sprinkle olive oil, balsamic vinegar and ground black pepper over bell peppers.
  • Serve steamed pumpkin with mashed potatoes and bell peppers with balsamic vinegar.
