The vegetarian recipe for Tomatoes in Spicy Tamarind Gravy:
3 tomatoes (one: to be blended; the other two: cut each into 6 wedges)
1 piece of ‘wheat cod fish’ 素麦鳕鱼
su mai xue yu/vegetarian fish 2 stalks lemongrass
3 cm length turmeric
3 fresh chilies
2 tbsp tamarind paste (dissolve in 1 cup of water and take the liquid)
1 tbsp vegetarian belacan powder
1 tbsp sugar
1 tbsp soy sauce
Place tomato (one) + lemongrass + fresh chilies + turmeric in a blender, puree and set aside.
Heat oil, fry vegetarian fish until golden brown, dish out, drain and make eight cuts (but do not split).
In the remaining oil (2 tbsp), saute vegetarian belacan powder + pureed tomato mixture until fragrant.
Add tamarind liquid + sugar + soy sauce and cook for about 2 minutes.
Add vegetarian fish + tomato wedges and cook for about 1 minute.
