The vegan recipe for Winter Melon and Tomato Soup:

- 400 g winter melon (cut into chunks)
- 4 tomatoes
- 5 cups water
- 1 tsp salt
- Place winter melon, tomatoes and water in a pot.
- Bring to a boil and simmer over low heat for 30 minutes.
- Add salt and stir well.
- Ladle into soup bowls and serve.
