The vegan recipe for Ginkgo Nut and Coix Seed Dessert Soup:
servings – 6
- 1 cup ginkgo nuts (break the shells and remove the cores)
- 1 cup coix seeds/Job’s Tears (wash and soak in water for 1 hour)
- 2 pieces of dried bean curd sheets (soak in water until soft and cut into sections)
- 6 cups water
- 5 tbsp sugar
- Place all the ingredients in a pot.
- Bring to a boil and simmer over low heat for 30 minutes.
- Add sugar, stir well and ladle into dessert bowls.
