The vegan recipe for Burdock and Mixed Vegetable Soup:

- 1/2 burdock root (peel and cut into cubes)
- 1 cup mixed vegetables
- 4 cups water
- 1 tsp salt
- Place all the ingredients in a pot and cook for about 15 minutes.
