The vegetarian recipe for Curry and Almond Fried Rice:

Ingredients

  • 2 cups cooked rice
  • 1/2 cup roasted almonds
  • 2 tomatoes (dice)
  • 1/2 lemon (squeeze the juice)
  • 1/4 cup vegetable oil

Seasonings

  • 1 tsp curry powder
  • 1/2 tsp turmeric powder
  • 1 tsp salt

Method

  1. Heat oil.
  2. Saute curry powder and turmeric powder over low heat until fragrant.
  3. Add almonds and tomatoes; stir evenly.
  4. Add rice and salt; stir-fry until fragrant.
  5. Dish out, set on plates and sprinkle lemon juice over.
  6. Serve.
