The vegetarian recipe for Curry and Almond Fried Rice:

Ingredients
- 2 cups cooked rice
 - 1/2 cup roasted almonds
 - 2 tomatoes (dice)
 - 1/2 lemon (squeeze the juice)
 - 1/4 cup vegetable oil
 
Seasonings
- 1 tsp curry powder
 - 1/2 tsp turmeric powder
 - 1 tsp salt
 
Method
- Heat oil.
 - Saute curry powder and turmeric powder over low heat until fragrant.
 - Add almonds and tomatoes; stir evenly.
 - Add rice and salt; stir-fry until fragrant.
 - Dish out, set on plates and sprinkle lemon juice over.
