Vegetarian Recipe: Black-Eyed Pea Rice Posted by Susan Siow | Jul 17, 2011 | Rice, Updates, Vegetarian Recipes Ingredients 1 cup of black-eyed pea (rinse, cook with 3 cups of water in a rice cooker until fully absorbed and set aside) 2 cups of rice (rinse) 5 shiitakes (soak in the water until soft and dice) 10 soya nuggets/vegetarian roasted chicken 素食香酥鸡 su shu xiang su ji (defrost and dice) Seasonings 1/2 teaspoon of white pepper powder 1/2 teaspoon of 5-spice powder 1 teaspoon of salt 1/8 teaspoon of vegetarian seasoning Method Heat up 1 cup of oil, add diced shiitakes + diced soya nuggets and stir-fry. Add cooked black-eyed peas + white pepper powder + 5-spice powder + salt + vegetarian seasoning + rinsed rice and stir-fry. Add 3 cups of water and simmer until half absorbed over high heat. Cover the pan, change to low heat and simmer. If the rice isn’t fully cooked, add some water and simmer until tender.
