• 1 cup of black-eyed pea (rinse, cook with 3 cups of water in a rice cooker until fully absorbed and set aside)
  • 2 cups of rice (rinse)
  • 5 shiitakes (soak in the water until soft and dice)
  • 10 soya nuggets/vegetarian roasted chicken 素食香酥鸡 su shu xiang su ji (defrost and dice)


  • 1/2 teaspoon of white pepper powder
  • 1/2 teaspoon of 5-spice powder
  • 1 teaspoon of salt
  • 1/8 teaspoon of vegetarian seasoning


  • Heat up 1 cup of oil, add diced shiitakes + diced soya nuggets and stir-fry.
  • Add cooked black-eyed peas + white pepper powder + 5-spice powder + salt + vegetarian seasoning + rinsed rice and stir-fry.
  • Add 3 cups of water and simmer until half absorbed over high heat.
  • Cover the pan, change to low heat and simmer.
  • If the rice isn’t fully cooked, add some water and simmer until tender.
