The vegetarian recipe for Tomatoes in Spicy Tamarind Gravy:
Ingredients
- 3 tomatoes (one: to be blended; the other two: cut each into 6 wedges)
- 1 piece of ‘wheat cod fish’ 素麦鳕鱼 su mai xue yu/vegetarian fish
- 2 stalks lemongrass
- 3 cm length turmeric
- 3 fresh chilies
Seasonings
- 2 tbsp tamarind paste (dissolve in 1 cup of water and take the liquid)
- 1 tbsp vegetarian belacan powder
- 1 tbsp sugar
- 1 tbsp soy sauce
Method
- Place tomato (one) + lemongrass + fresh chilies + turmeric in a blender, puree and set aside.
- Heat oil, fry vegetarian fish until golden brown, dish out, drain and make eight cuts (but do not split).
- In the remaining oil (2 tbsp), saute vegetarian belacan powder + pureed tomato mixture until fragrant.
- Add tamarind liquid + sugar + soy sauce and cook for about 2 minutes.
- Add vegetarian fish + tomato wedges and cook for about 1 minute.
- Serve.
