The vegan recipe for Tomato Sauce Fried Rice:

- 2 cups cooked rice
- 3 tbsp tomato sauce
- 1/2 cucumber (cut into strips)
- 1/2 cup cashew nuts
- 2 tbsp vegetable oil
- 1 tsp salt
- Heat vegetable oil, saute cashew nuts and salt until fragrant.
- Add cooked rice and tomato sauce; stir until well combined plus fragrant.
- Add cucumber and stir evenly.
- Remove and serve.
