The vegan recipe for Lemongrass and Tofu Soup:

- 1 stalk lemongrass (cut into 2 inch lengths and lightly pound)
- 1 tomato (cut into chunks)
- 1/2 packet tofu (cut into chunks)
- 1 tsp vegetable oil
- 3 cups water
- 1 tsp salt
- Place vegetable oil and lemongrass in a pot; fry the lemongrass until fragrant.
- Add tomato, tofu and water; bring to a boil and simmer for 5 minutes.
- Add salt and stir well.
