The vegetarian recipe for Kombu Sushi:

- 1 cup calrose rice/sushi rice
- 2 cups water
- 1 small piece kombu/kelp (soak in water until soft, cut into long strips, blanch in boiling water and drain)
- 2 tbsp rice vinegar
- 1 tbsp sugar
- Place calrose rice and water in the rice cooker and cook.
- When the rice is ready, dish out and cool.
- Add rice vinegar and sugar; mix evenly.
- Form into ovals and bundle up with kombu strips.
- Serve with soy sauce and wasabi.
