• 6 eggplants (cut into planks, briefly soak in the water, drain and set aside)


  • 1/2 teaspoon of salt
  • 1/8 teaspoon of vegetarian seasoning


  • Heat up oil, add eggplant planks and stir-fry.
  • Add salt + vegetarian seasoning and briefly stir-fry.
  • Switch to low heat and simmer the eggplant until tender.
  • Sprinkle over with a small amount of water, briefly simmer, dish out and serve.
