- 6 eggplants (cut into planks, briefly soak in the water, drain and set aside)
- 1/2 teaspoon of salt
- 1/8 teaspoon of vegetarian seasoning
- Heat up oil, add eggplant planks and stir-fry.
- Add salt + vegetarian seasoning and briefly stir-fry.
- Switch to low heat and simmer the eggplant until tender.
- Sprinkle over with a small amount of water, briefly simmer, dish out and serve.
