6 slices of vegetarian fish/
su shi kuai le yu 素食快乐鱼 6 ladyfingers (cut into medium pieces)
2 tomatoes (cut each into 4 wedges)
2 eggplants (cut into 2-inch lengths)
1/2 cup of coconut milk
1 tablespoon of curry powder
1 tablespoon of turmeric powder
1/2 tablespoon of chili powder
1 tablespoon of vegetarian tom yum paste
1/2 teaspoon of salt
1 tablespoon of sugar
1 tablespoon of soy sauce
Pan-fry vegetarian fish slices in 1 cup of heated oil, dish out and set aside.
Pan-fry eggplant + ladyfinger, dish out and set aside.
In some remaining oil, stir-fry chili powder + curry powder + turmeric powder + vegetarian tom yum paste.
Add 1 big bowl of water + salt + sugar + soy sauce and bring to a boil.
Then, add fried vegetarian fish + fried eggplant + fried ladyfinger + tomato and briefly simmer.
Slowly pour the coconut milk over, briefly cook and serve.
