Ingredients
- 1 cup of black-eyed pea (rinse, cook with 3 cups of water in a rice cooker until fully absorbed and set aside)
- 2 cups of rice (rinse)
- 5 shiitakes (soak in the water until soft and dice)
- 10 soya nuggets/vegetarian roasted chicken 素食香酥鸡 su shu xiang su ji (defrost and dice)
Seasonings
- 1/2 teaspoon of white pepper powder
- 1/2 teaspoon of 5-spice powder
- 1 teaspoon of salt
- 1/8 teaspoon of vegetarian seasoning
Method
- Heat up 1 cup of oil, add diced shiitakes + diced soya nuggets and stir-fry.
- Add cooked black-eyed peas + white pepper powder + 5-spice powder + salt + vegetarian seasoning + rinsed rice and stir-fry.
- Add 3 cups of water and simmer until half absorbed over high heat.
- Cover the pan, change to low heat and simmer.
- If the rice isn’t fully cooked, add some water and simmer until tender.
