The vegan recipe for Black Bean and Longan Soup:
servings – 4
- 1/2 cup black beans (soak in water for 3 hours, remove and drain)
- 15 dried longans
- 5 cups water
- 1/2 tsp salt
- Place black beans, dried longans and water into a pot; bring to a boil.
- Switch to low heat and simmer for 30 minutes.
- Add salt and stir well.
- Ladle into soup bowls and serve.
