The vegan recipe for Lotus Root Vinegar Soup:

Ingredients
- 200 g lotus root (slice)
- 4 slices ginger (crush)
- 1/2 cup black vinegar or balsamic vinegar
- 2 cups water
Seasonings
- 2 tbsp brown sugar
- 1 tbsp soy sauce
Method
- Place lotus root, ginger, water and black vinegar in a pot.
- Cook over low heat for 20 minutes.
- Add brown sugar and soy sauce; stir well.
- Serve.
