The vegetarian recipe for Stewed Herbal Amaranth Soup:
servings – 4 to 6
Ingredients
- 300 g fresh amaranth greens
 - 1 tbsp dried wolfberries/goji berries
 - 3 dong quai slices
 - 800 cc boiling water
 
Seasonings
- 1 tsp salt
 - a sprinkle of vegetarian seasoning
 
Method
- Lay amaranth greens, wolfberries, dong quai slices, salt and vegetarian seasoning on a large piece of aluminium foil.
 - Place in a large bowl.
 - Gently pour the boiling water over and close up the foil.
 - Steam over medium heat for 30 minutes.
