The vegetarian recipe for Black-Eyed Pea Curry:
servings – 4
- 1 cup black-eyed peas (soak in water for 30 minutes)
- 1 carrot (dice)
- 2 tomatoes (dice)
- 2 tbsp vegetable oil
- 5 cups water
- 1 tbsp curry powder
- 1 tsp soy sauce
- 1 tsp salt
- 1 tsp sugar
- Heat oil and saute curry powder until fragrant.
- Place the oil and curry powder in a pot.
- Add water, black-eyed peas, carrot and tomatoes; cook for 30 minutes.
- Add salt, sugar and soy sauce.
- Combine, dish out and serve.
