The vegetarian recipe for Black-Eyed Pea Curry:

Ingredients

  • 1 cup black-eyed peas (soak in water for 30 minutes)
  • 1 carrot (dice)
  • 2 tomatoes (dice)
  • 2 tbsp vegetable oil
  • 5 cups water

Seasonings

  • 1 tbsp curry powder
  • 1 tsp soy sauce
  • 1 tsp salt
  • 1 tsp sugar

Method

  • Heat oil and saute curry powder until fragrant.
  • Place the oil and curry powder in a pot.
  • Add water, black-eyed peas, carrot and tomatoes; cook for 30 minutes.
  • Add salt, sugar and soy sauce.
  • Combine, dish out and serve.
