The vegetarian recipe for Gingerbread Men (eggless):
4 cups wheat flour
1 cup butter
1/4 cup fresh milk
1 tsp baking soda
4 portions or 64 g soft cheese – suitable for vegetarian
1 tbsp water
1 tbsp ground ginger
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp salt
2 cups brown sugar
2 tsp icing sugar
Place brown sugar and water in a pot, stir evenly and dissolve over low heat.
Turn off the heat, put in a bowl, add baking soda, mix evenly and let it cool.
Add butter, wheat flour, ground ginger, ground cinnamon, ground nutmeg, milk and salt; combine.
Knead the dough until smooth and fine.
Use a roller to flatten the dough to half inch thickness.
Cut gingerbread men out with gingerbread men cookie cutter (small cutter = 50 gingerbread men).
Lay them on a greased baking tray.
Bake at 160°c for about 20 minutes.
Cool and decorate with eggless icing (combine soft cheese and icing sugar; whisk until fluffy).
