The vegetarian recipe for Easy Vegan Cup Cakes:

Ingredients
Cup Cakes
- 2 cups wheat flour
 - 1 tbsp ground flax seeds (mix with 3 tbsp hot water and soak for 1/2 hour)
 - 1 tsp baking powder
 - 1/2 tsp baking soda
 - 1/4 cup vegetable oil
 - 1 tsp vanilla flavor
 - 1/2 cup soy milk
 - 1/2 cup sugar
 
Frosting
- 1 cup vegetable shortening
 - 1/2 cup icing sugar
 - 1 tsp vanilla flavor
 - 3 tbs vegetable oil
 - 1 tbsp soy milk
 
Method
Cup Cakes
- Combine wheat flour and vegetable oil.
 - Add flax seed paste, baking powder, baking soda, sugar, vanilla flavor and soy milk; beat until fluffy.
 - Place paper cup cake cases in the holes of a muffin tray and spoon the batter into the cases.
 - Bake in a preheated oven at 170°c for about 20 minutes.
 - Remove and cool.
 
Frosting
- Combine all the ingredients and beat until fluffy.
 - Top the cup cakes with the frosting.
