Ingredients
- 1 cucumber (cut into thick pieces)
- 2 tomatoes (cut each into 8 wedges)
- 1 small bunch of Chinese celery (cut into 1-inch lengths)
- 1 cup of bean sprouts (rinse and drain)
- 1/4 loaf of vegetarian fish/素食乌柳宜 su shi wu liu yu (cut into small slices – 1/4 round shape, fry and set aside)
- 2 pieces of dry tofu/豆干 dou gan (cut into thin squares)
- 1 kg of fresh wheat noodle/生面 saang mein
- 1 fresh chili (cut into round slices)
Seasonings
- 3 tablespoons of tomato sauce
- 1 tablespoon of vegetarian tom yum paste
- 1 tablespoon of soy sauce
- 1 tablespoon of sugar
- 1 tablespoon of curry powder
- some limes
Method
- Stir-fry curry powder + vegetarian tom yum paste over low heat.
- Add rinsed bean sprouts + dry tofu pieces + fried vegetarian fish + tomato wedges and stir-fry over high heat.
- Add fresh wheat noodles, briefly stir-fry.
- Add soy sauce + sugar + tomato sauce + Chinese celery sections + cucumber pieces and stir-fry a few times.
- Dish out, top with chili slices and squeeze over some lime juice before serving.
