The vegetarian recipe for Gingerbread Men (eggless):
Ingredients
- 4 cups wheat flour
- 1 cup butter
- 1/4 cup fresh milk
- 1 tsp baking soda
- 4 portions or 64 g soft cheese – suitable for vegetarian
- 1 tbsp water
Seasonings
- 1 tbsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp salt
- 2 cups brown sugar
- 2 tsp icing sugar
Method
- Place brown sugar and water in a pot, stir evenly and dissolve over low heat.
- Turn off the heat, put in a bowl, add baking soda, mix evenly and let it cool.
- Add butter, wheat flour, ground ginger, ground cinnamon, ground nutmeg, milk and salt; combine.
- Knead the dough until smooth and fine.
- Use a roller to flatten the dough to half inch thickness.
- Cut gingerbread men out with gingerbread men cookie cutter (small cutter = 50 gingerbread men).
- Lay them on a greased baking tray.
- Bake at 160°c for about 20 minutes.
- Cool and decorate with eggless icing (combine soft cheese and icing sugar; whisk until fluffy).
- Serve.
