The vegetarian recipe for Sweet Potato Leaf Curry:

- 500 g sweet potato leaves (wash and drain)
- 1 cup coconut milk
- 3 tbsp vegetable oil
- 1 cup water
- 2 tbsp curry powder
- 1/2 tsp salt
- 1 tbsp soy sauce
- Heat oil and saute curry powder over low heat until fragrant.
- Add sweet potato leaves and briefly saute over high heat.
- Cover the pan and simmer for 15 seconds.
- Add coconut milk, soy sauce, salt and water.
- Stir evenly and cook over medium heat for another 1 minute.
