The vegetarian recipe for Easy Vegan Cup Cakes:

Ingredients

Cup Cakes

  • 2 cups wheat flour
  • 1 tbsp ground flax seeds (mix with 3 tbsp hot water and soak for 1/2 hour)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup vegetable oil
  • 1 tsp vanilla flavor
  • 1/2 cup soy milk
  • 1/2 cup sugar

Frosting

  • 1 cup vegetable shortening
  • 1/2 cup icing sugar
  • 1 tsp vanilla flavor
  • 3 tbs vegetable oil
  • 1 tbsp soy milk

Method

Cup Cakes

  1. Combine wheat flour and vegetable oil.
  2. Add flax seed paste, baking powder, baking soda, sugar, vanilla flavor and soy milk; beat until fluffy.
  3. Place paper cup cake cases in the holes of a muffin tray and spoon the batter into the cases.
  4. Bake in a preheated oven at 170°c for about 20 minutes.
  5. Remove and cool.

Frosting

  1. Combine all the ingredients and beat until fluffy.
  2. Top the cup cakes with the frosting.
  3. Serve.
