The vegetarian recipe for Stewed Herbal Amaranth Soup:

servings – 4 to 6

Ingredients

  • 300 g fresh amaranth greens
  • 1 tbsp dried wolfberries/goji berries
  • 3 dong quai slices
  • 800 cc boiling water

Seasonings

  • 1 tsp salt
  • a sprinkle of vegetarian seasoning

Method

  1. Lay amaranth greens, wolfberries, dong quai slices, salt and vegetarian seasoning on a large piece of aluminium foil.
  2. Place in a large bowl.
  3. Gently pour the boiling water over and close up the foil.
  4. Steam over medium heat for 30 minutes.
  5. Serve.
